"My phlosophy of vine making is very simple. I try to retain the fragrance of the fruit and the flavour characteristics you appreciate when you eat well ripened grapes. However, the process is more complex than one could imagine, as depending on seasonal variations and rainfall, each year produces different characteristics in the grapes. You have to react accordingly to make the best possible blends. Whilst I always try to retain each varietal character, I also attempt to add my personal touch.
The quality of vines starts with the vineyard management. I try to achieve this goal by giving my personal support and advice to the employees in their fieldwork throughout the year. Once the wine is made and carefully blended its quality cannot be altered. One can only try to achieve the best potential quality that each years crop can offer."
